There are some plugins I automatically update, like Elementor. I’m tempted to set those core plugins (Elementor, caching plugins, WP Vivid) to trusted so they just manage themselves.

I never enable automatic updates. There’s always a (small) chance that an update can fail. Maybe it breaks the site, maybe only something in the backend or something else that has an unwanted effect. With automatic updates, you’re probably not around at that moment to fix these issues.
MainWP makes it easy to update sites in bulk at a moment you are available to fix things. So I always use that.
The only situation I might consider to enable automatic updates is for sites that are allowed to break, like testing/staging sites that are there but not for the public.
