How do I setup safe updates (if site is broken after update automatically restore previous version)? Is it possible to setup visual regression testing with MainWP?

Welcome to the MainWP community.
Safe Updates / Updates Rollback triggers automatically when there is a failed update of a plugin or a theme.
It is not possible to manually roll back a plugin or a theme, so there is no function or a feature dedicated to it on the Dashboard.

MainWP does not currently have Visual Regression tests. There is an open suggestion for it on our official feedback site. Please feel free to give it a vote or a comment. It lets us know which features our users want the most.
MainWP does have the option to check the site HTTP response after the update.
So if an update has caused an issue with the Child Site, which results in an undesirable status (usually anything other than 200 (OK), you will be alerted by the MainWP Dashboard.
